Vegan Veggie Wrap

Vegan Veggi Wrap

1/2 sliced cucumber
1/2 sliced tomato
1/4 cum Hummis
1 handful of Romaine lettuce
1/2 cup drained and rinsed black beans
1 whole grain wrap
Mix all together and consume!

 

 

BLACK BEAN BURGERS  aka “Sherpa Burgers”

*I need to give credit where credit is due for this one, it is the creation of the husband of one of the firefighters I work with*

FAMILY RECIPE:
1 can of black beans
1 bell pepper (any color), chopped
1 onion, minced and sautéed in olive oil until caramelized
1-2 carrots, peeled and chopped
½ – 1 cup frozen/fresh/canned corn
1 cup broccoli flowers, chopped into small pieces
1 cup bread crumbs
½ cup whole wheat flour (can use regular flour)
1 cup salsa
½ – 1 tsp chili powder
½ – 1 tsp cumin
½ – 1 tsp crushed red pepper
-Sautee onions until carmelized
-Combine veggies, seasonings, and other ingredients into bowl and mash into a paste using a manual potato masher and/or your hands.
-The mashed up paste should be seasoned until it is tasty to eat.
-Form into patties using 1 cup-sized measuring cup.
-Saute over medium heat for about 5-6 minutes per side.

STATION RECIPE:
3 cans black beans
1-2 bell peppers, diced
1 onion, minced (any kind of onion)
3 good sized carrots, diced
1 small bag frozen corn
3 cups salsa (Gene likes extra hot salsa OR his secret homemade “Death Salsa”)
1/2 to 1 TBSP chili powder (approx.)
1 TBSP Cuman powder (approx.)
Dash of crushed red pepper (if your a wuss)
3 cups bread crumbs
1.5 cups whole wheat flour
salt and pepper
-Sautee onions until carmelized
-Combine veggies, seasonings, and other ingredients into bowl and mash into a paste using a manual potato masher and/or your hands.
-The mashed up paste should be seasoned until it is tasty to eat.
-Form into patties using 1 cup-sized measuring cup.
-Saute over medium heat for about 5-6 minutes per side.

SPECIAL NOTES FOR BOTH:
-Please use the measuring cup to get proper portion to make patties
-Patties are very fragile until cooked on both sides, flip with caution
-You can use any vegetables you like, not just the ones I’ve listed. These can also be grilled, but I think this is tastier.
